This Skill Set is designed for individuals who function as Food Safety Supervisors (Levels 1 & 2 combined) and are tasked with managing the day-to-day execution of the food safety program across an organisation, particularly in the Community and Health Service sector.
It outlines the roles and responsibilities of a Food Safety Supervisor, explaining the food safety process and the critical measures necessary to maintain safe food handling consistently.
The course specifically addresses methods for controlling food hazards at crucial control points, including receipt, storage, preparation, processing, display, servery, packaging, transport, and disposal of food.
Participants are required to demonstrate their practical food safety skills and knowledge through a third-party observation form. These assessments can take place in any food handling environment such as commercial kitchens, catering production lines, or food preparation areas that are equipped with standard industry facilities. Observations may occur at the participant's place of work or through volunteering at community centres, sports clubs, or local councils.
Please note: It is essential for students to be employed or to secure a volunteer role in a suitable workplace that can provide a third-party observer. This observer is responsible for witnessing and documenting the student's practical performance using a third-party report form.
*IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course.

This Skill Set is recognised in all states and territories, is valid for all industry sectors (except NSW*), and meets all legal requirements for Food Safety Supervisor training throughout Australia. * In NSW. the HLTSS00061 Food safety supervision skill set - for community services and health industries does not require the additional NSW FSS certificate.
Students who complete HLTSS00061 Food safety supervision skill set - for community services and health industries can not work as a Food Safety Supervisor in the hospitality, retail or transport and distribution sector however as they require the NSW FSS certificate.

Learning content is provided in an online format within the course. The assessment component consists of multiple-choice questions and written questions.
Please note that all case studies within this course are fictional. As a wide variety of job descriptions and workplace environments exist, case studies may not always cover all types of possible scenarios encountered within your job role or scope of work.
The completion of a Third-Party Observation Report is required. You will need to download and print a copy of the Third-Party Observation Report to be given to your workplace supervisor/manager/team leader to complete. The report must be conducted in a real workplace after completing the online component of the course. You will be required to demonstrate your skills in a real workplace and submit the report in order to receive final competency. All sections of this report must be complete in full to be valid and considered as part of your assessment.
